We wanted to know if deleting and craeting boards in production had any affect on Jira DB records.

Specifically Sprints, records, workflows, conditions, validators may be involved. Are there any worries to deleting a managed board in GH?

The Rapid Board itself stores data on the configurations of the board, but pulls everything else from the project itself. Even if you were to create a Simplified workflow, the workflow itself does not get deleted when you delete a Rapid Board.

The only thing that gets removed from the database side would be the Rapid Board settings and the planned sprints. NOT active sprints or already completed sprints, but just planned ones that were on the Plan page.

Also, if you only delete the board and not the filter it was created from, you can essentially get the board back by creating a new one off that filter (minus the planned sprints as per Ivan's answer).

Natalie is completely correct. Deleting a Rapid Board doesn't even remove the filter that was created (if you opted to have a filter created). So you can definitely re-create that board if necessary.
