Our policy (gov offices) is to move to cloud located explicitly in EU regions . 

For now (unless you're an enterprise customer) we do not have this option/

Kindly see how Atlas (mongoDB) saas have managed to expose it to customer nice and easy.

Please advise and update your intentions per this matter

You will need to sign up as an Enterprise customer if you want the ability to pin your data to a location.

There is no intention to change anything in https://www.atlassian.com/trust/privacy/gdpr at present.
