I have a Kanban board that lists all of the current sprint's stories.
I would like to set up a quick filter that will remove any stories that do not have a sub-task assigned to currentUser().

Unfortunately, there's no way to perform a quick filter as you want only with in-built JIRA JQL queries since it does not support sub-queries as you mentioned, however, there are some plugins that provide you this functionality.
The best options will depend on which platform you are (Cloud or Server). Here are some of the plugins which you can use to achieve it:
