I have a Kanban board that lists all of the current sprint's stories. I would like to set up a quick filter that will remove any stories that do not have a sub-task assigned to currentUser().

Unfortunately, there's no way to perform a quick filter as you want only with in-built JIRA JQL queries since it does not support sub-queries as you mentioned, however, there are some plugins that provide you this functionality.
