I have created a custom field with a list drop-down options and I wondering if there was a way where the last item on the list could be "Other" and if selected a free text field appears.
You will need to find an App that provides a field type that does that.
The off-the-shelf fields don't do it, they need admins to set the list. Apart from the "label" field which is not a drop-down, but does let your users add whatever they want if the suggestions they see don't match what they want to add.
