Has anyone run into an issue on the cloud version where deleting a board within a project deletes the project? I just had this happen to me, and find it very troubling if this is a common occurrence. Please advise.

I have not seen that - or tried that. I would suggest you put in a Support Ticket with Atlassian to see if they can duplicate it.
