Is there any way to create a separate DoD per issue type (User Story vs. Defect) within each project? From what I've seen, I was able to create DoD for each project, but the same DoD appeared on bugs and USs. I need two separate sets of DoD for each issue type.

Our Smart Checklist for Jira add-on also allows creating separate DoD per issue type. You can create a template and make it default for your separate issue types, so once an issue of a specific type is created - a checklist template is added to it on-the-go. Here's how it works. Both Issue Checklist Pro and Issue Checklist Free allow you to specify the DoD checklist for each issue type separately.
