I know how to change the fields that appear by default on screens. However, it would seem that there is a "limit"? You can set fields as default but they do not show? You can only see them if you configure the fields once and then it is set. Is there no way to on a system level show all fields? So all of the additional fields would be ticket by default.

Each user has access to the Configure Fields button and can change their preferences for what is displayed. This is a user preference option and so cannot be set globally for all users.
