Pretty sure I know the answer is "not possible", but I wanted to double-check because this ability would save me a ton of time. Is there a way to adjust the date of when something was moved to Resolved or Closed? I understand I can manually change the Resolution Date, but that is different than the "status changed to Resolved" date.

The system date field called Resolved (what is populated when the card moves into a Done status category) cannot be changed.
You might consider adding a custom date field and populating that when a card is Resolved and then based reports/queries on that date.

You can try a third-party add-on - Time in Status for Jira Cloud, that generates 7 types of status reports including Status Entrance Date report. It shows the date a particular issue has entered each of a status (Resolved or Closed, etc.).
