I manage multiple projects with different teams and would only like to give team members access to the project they are on.

Can you please confirm if you are using a Next-gen or Classic project?
If you are using a classic project, the Browse projects permission under Project settings > Permissions is the one responsible for project visibility. Explaining better, all users added in the roles or groups in this permission can access the projects related to that permission scheme.
That being said, in order to allow your users to only access determined projects, you must:
1 - Ensure to restrict specific roles to the project permission scheme (under project settings > Permissions), removing the Application access (Any logged in user) from the browse project permission (Under project settings > Permissions).
2 - Add the users you want to access that project with those roles (Under Project settings > People)

For Jira Next-gen projects, the permissions are simpler and straight to the point. Basically, you have the following options:
Open. When a project is open, anyone on your Jira site can view, create and edit issues in your project. With this access level, Jira gives anyone who logs into your Jira site the Member role in your project.
Limited. When a project is limited, anyone on your Jira site can view and comment on issues in your project. But, they can't edit them or create new ones. With this access level, Jira gives anyone who logs into your Jira site the Viewer role in your project.
Private. When a project is private, only Jira admins and people you add to the project can see it in their project directory or its issues in search results.
Jira administrators (anyone with the Administer Jira global permission) always have access to your project's settings. Read more about how people access your next-gen project.
Your project’s access level sets general permissions for people across you Jira site. You can give specific access or additional permissions to individual people by creating your own project roles.Read more about roles.
