Can one status have 2 types?

I have a "In UAT" status and its set to be a "DONE" type of status (green) . But another project wants it to be  an "In Progress" type of status (Blue). I'm guessing it will have to be a new status?

Correct, a status can only be in one category.  You'll need a new status, with a slightly different name.
