Hello,
I am playing around with the features of Jira so that we can implement in our organization. We have three different products/applications and hence respective accountability is required. While creating a new Jira mission currently there is an option to add component but I can not see any option to add product. Can you please suggest on this?

You can either use components as products or you can create a new select list custom field and add the filed to the required screens. You can find more info about custom fields here:

project, epic can also be a way to divide the product line, and you can build a board with multiple product lines to manage it.
