I am trying to create a report in JSM to see the time between different statuses. I am trying to avoid a third party app. I feel like it would have something to do with SLA's and setting those up to be able to track. I could be wrong though.
I know you don't want a third-party app. But "Status Time free" has worked well for us precisely to have a detail of the statuses of our items in the Jira boards, I don't know if it applies to your case.

Update on May 9th, 2024: Time in Status by OBSS was recently rebranded as Timepiece. It is still the same capable app with the same dedicated team behind it. The answer below mentions the app as "Time in Status" but you can find the app in the marketplace as "Timepiece (formerly Time in Status)".

Sometimes it can be difficult, confusing and time-consuming to find your way through the built-in Jira gadgets and create a solution on your own. For specific needs like yours, it is better to use out-of-the-box solutions. If you are open to using an application specifically tailored to your needs, Time in Status which is developed by my team at OBSS, is the tool I would highly recommend. It is available for both Jira Cloud, and Data Center.
Time in Status has Duration Between Statuses report type which shows the duration between two specific statuses. This report type also allows the user to exclude the times for "pause" statuses.
For all numeric report types, you can calculate averages and sums of those durations grouped by the issue fields you select. The ability to group by parts of dates (year, month, week, day, hour) or sprints is particularly useful here since it allows you to compare different time periods or see the trend.
The app calculates its reports using already existing Jira issue histories so when you install the app, you don't need to add anything to your issue workflows and you can get reports on your past issues as well. It supports both Jira, JSM and JPD projects.
Time in Status reports can be accessed through its own reporting page, dashboard gadgets, and issue view screen tabs. All these options can provide both calculated data tables and charts. And the app has a REST API so you can get the reports from Jira UI or via REST. Also you can export the reports in to various formats easily.

You can use Jira Rest API's to get this data. If you prefer to get this data easily using a third party app, you may want to have a look at the one we have developed.
The time in status report shows the time spent by your issues in each status during the entire workflow.

tracking time in and between statuses isn't Jira's greatest strength unfortunately; if you want to go without add-ons (apps), you'll either have to use Jira Automation to do the calculations (this article could be a good starting point), or export your data using Jira's REST API and do the post processing externally. I'm not personally aware of an SLA-based solution but perhaps someone else has an idea?
Regarding Marketplace apps, as you've surely noticed by now, there are a number of solutions available that operate in this space. Just to throw in another one: My team and I work on an app that should nicely solve this problem for you, and works well in projects of all project types, including JSM projects: JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of so-called history columns that aren’t natively available, including time in [status], time between [status] and [status], and many more.

As you can see above, you can easily sort and filter by your history columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.

With their help, you can select tasks, export them, and continue creating a report (calculating data, creating charts, etc.) in Excel or Spreadsheets.
