For Organisations inside of the service management tool, you can add "Detailed" fields,
Looked at the API documentation and there doesnt appear to be a way to extract these details.

I want to use this in combination with an external script to assign organizations a default agent for new support tickets.
Welcome to the community. Have you tried using the out-of-the-box automation to update the assignee field based on the organization?
