With Jira Service Management, is it possible for organisations to see how many hours of support they have consumed in a given month?
Not OOTB. I recall other posts on this question and some suggested addon apps. I would recommend searching the community and also the marketplace for possible solutions. Of course these are paid solutions.

No I don’t have any experience with this or have discussed with colleagues what they might be using. Good thing is you can always try these things out and turn them off if they don’t work for you.
