I have reviewed the article on why this is occurring but it only gives the related gmail article for personal users. For GSuite I cannot do this unless I add it as an alternate domain which requires me to verify ownership of the domain. Is there an alternate solution or some way to fix this issue? I would like to get my project address set as the sender.

If you want Jira to send email from your own domain you will need to prove ownership you cant skip that.
Here is a guide on how to prove domain ownership
For every project you can use a different email address if you use personal email you don't need to prove ownership.
