Hello,
I'm currently in the process of testing out and configuring service management for our three companies.
Our IT department supports all of them and it would be ideal to have oversight on all of them within one Project.
Is this possible?
If not, does anyone in the same boat have recommendations or best practices on how to best configure?

Sure - this is possible.
I assume you want to split up which company each user works for? You can do this using Organizations. Check these help pages as a starting point:

Yes that would be idle to split up the users as well.
