This is a laborious process no matter how you slice it, but definitely good Jira hygiene all the same. Historically, I'll do this:

Thank you @Mark Segall for the tips can you elaborate on #2 working through the fields based on the screens. For instance what does "No Information" mean, are these custom fields we can remove due to no information or use. Will we still need to review the screens/context information prior to removing if the answer is yes? See sample custom field below.

That's a good question - I've seen "No Information" on the Last Used on a number of custom fields, but I know they're in use. I'm not 100% sure how that Last Used is calculated. Perhaps someone else in the community has some insight on that attribute.
