Looking to understand if it is possible to add customers in an organization as watchers of an issue so they receive updates and alerts on the issue ? We have our customers grouped by organization and it would be helpful when one the customers opened an issue that others within their same organization were receiving notifications associated with the issue.

I don't think its possible to do such. Adding watchers to the watchers field is a Jira feature and customer only accounts (added on organizations) cannot be added as a Jira user. Therefore, you can't add such user into that field. What you should do here is allow the ability to share a ticket if it is not already enabled in your project.
