On JSM Project creation we instilled the wrong project types for select projects.
Is it easily possible to switch a JSM project template to another one? For example, changing a ITSM project to General management?

You can make the change and it is fairly simple to do. You basically create a new project with the template you want and move the issues. Instructions can be found here: https://support.atlassian.com/jira-cloud-administration/docs/convert-a-project-to-a-different-template-or-type/
Hi there @Brant Schroeder What about automations, rules, etc? Will those get copied over? Or can we copy over this? Or is it best to keep old projects live and do the automations and rules manually?

Automation rules will have to be moved manually.

When you create the new project a new portal will be created for it. You will have to migrate request types you created over from the old project manually by recreating them.
Just out of curiosity why do you want to make the change?
