I would like to direct specific technicians to each service queue that I have created. A technician will not be able to see the queue of the other, how can I do that?

Generally if you have the browse issue permission you are able see every issue in a Jira project. If you want to limit this you should use issue security levels: https://support.atlassian.com/jira-cloud-administration/docs/configure-issue-security-schemes/
With automation you can set the level per service request.
But a better approach might be to create multiple jsm projects.

There is no option to hide queues from service desk agents. There is a change request for that here:

As noted by @Rudy Holtkamp you can use Issue Security Schemes with Levels defined to make the issues themselves inaccessible to groups of users based on user group or project role.
