Every time a user writes a request to our service desk, a new JIRA Service Desk customer user is created. Customers are communcating only per mail and they have no access to their automatically created customer account.
We want to anonymize all customer accounts older than a specific age. JIRA offers the option to anonymize single users:
But I did not find any possibility, not built in nor via an add-on, to anonymize multiple users at the same time.
How yould this be approached?

I was not able to find anything out of the box for that but going by the article https://confluence.atlassian.com/adminjiraserver/anonymizing-users-992677655.html there is a way to do this through the REST API.

So as an admin you coud write your own script that and using the API you could then anonymise them!
