Hi folks,
I'm trying to make JIRA add my colleague as a watcher, if I mention him in a comment on the ticket.
I can't find the right switches in automation.
Has someone done this before?

I do not beleive this is possible. One of the benefits of @mention over watcher is that it can be used as a one-time notification event vs. being spammed with lots of updates. I also find it to be a polite way to manage the watcher list, i.e. by mentioning a person they are notified of an issue and if they are truly interested they can add themself to the watch list. If you want someone to be a watcher then it is a quick step to do so.
