How can I establish an approver to my flow ?, reading the documents online and the option to add approver does not appear to me.

Welcome to Atlassian Community!
The approval functionality is a feature applicable only for JIRA Service Desk projects.
That being said, in order to display the approver option for your workflow statuses, you must first map your workflow to the workflow scheme of your project and select it for the issue types you want, we explained in this documentation:
Once you do it, you just need to navigate to your SD project > Project Settings > Workflows > Edit > Diagram View > Click in the status block, just like in the screenshot provided at the documentation:
