I have a service desk project that accepts emails from an automated system to generate issues. In the queue, the summary of the issue is the subject line of the email. Can you change this so that text from the body of the email is selected for the summary?

You will not be able to change that mapping. After the issue is created you could use automation to update the summary field with the description field. Just a couple of things to think about. Summary field is plane text and has a character limitation that is shorter than the description field. You could always set it up and see how it goes. Is there a specific reason as to why you want to make this change?
The automated system that sends the email fills the subject line with general information. We cannot change the way this system formats emails.
When we look at the project queue all the tickets have matching summaries. I wanted to pull out text from the body so that when you look at the queue the summary is more informative.
