is there any way how can I edit the internal notification? I would like to add a priority to the email notification to the notification "Request assigned".

For the customer notifications you can do this: https://support.atlassian.com/jira-service-management-cloud/docs/edit-the-content-of-your-customer-notifications/ (Only for jira-service-management)
For the others I think it is not possible. https://support.atlassian.com/jira-cloud-administration/docs/configure-email-notifications/
There are add-ons like JMWE for jira cloud that allow you to configure 100% customized notifications
