We're looking to change Jira Service Management to send emails from our own domain as per this guide (e.g. support@OurOwnDomain.com)
We have a large number of users accessing our instance of JSM using a range of email domains (e.g. joe@OurOwnDomain.com, peter@SupplierDomain.com etc)
Can anyone confirm whether this is possible without restricting the domain names of users accessing JSM?

When a domain is verified and the accounts are claimed, the only difference is that users from that domain will no longer be able to change their email address and as an administrator, you will be able to change their full name, for example.
It won’t affect the way they log in.
Using your example:
If you verify OurOwnDomain.com, Joe’s account will be managed by you, but Joe will log in normally with email and password (or using Google), nothing will change regards the login.
Regarding Peter’s account, nothing will change for them, since SupplierDomain.com is not verified. They will log in normally and they will have control of their account on id.atassian.com.
After you verify the OurOwnDomain.com and change the project’s email address, the notifications will be sent from that domain for customers and users of all domains.
