I have a Tasks project and I would like to tag each ticket with a specific value (in this case - clients names). I have a list of over 100+ clients names.
which field can be compatible for this criterion?

You can create a static dropdown list with every customer you have,
Settings -> Issues -> Custom fields, search for "customer", click on the 3 dots on the right, select "context and default values and you can add them there
