We would like to know how can we get the change management workflow

In the case we changed it we would like to know how can we reset it to the default one. We looked up the marketplace and there is currently nothing similar to above for Cloud JIRA instance.

Try the following.
1. Create a dummy project of type "IT Service Desk", you will then get a workflow in that project which should be very close to the one that you shared in the link. You can always modify it further, the page has all the details.
2. Go to Setting (Jira Administration) > Issues > Workflows > Add workflow > Import from marketplace. Search for "Change Management" and you will get lot of templates to choose from.
3. Create it yourself from scratch, should not take lot of time to be honest. Plus it is good opportunity to review what you need for your requirements, this would be my recommendation.
