Can some will help me out How to Create Matrix in JSM Project.

for example: what role can able to use for access only customer portal

Permissions, Schemas, how to use the permissions and so on.

If is there any matrix is there for JSM project please help me out on the same.

Matrix depends on each organizations how they setup. You should create them manually.
