I'm trying to figure out a function/add-on that can help me to schedule the calendar of the employee, and avoid booking 2 tickets at the same time.
Like when a customer wants to book a specific time and date, he/she would be just able to see the date and time that is available which depends on the calendar of the employee from Outlook.

Per your description, I understand you need a Jira calendar integrated with Outlook to assign the issues to your users, so the issues would be considered as events in the calendar to avoid scheduling at the same time as other events (Meetings, day-offs, etc). Is that correct?
There are many calendar apps that provide you with the option to schedule issues, however, I believe you can achieve the Outlook integration with the following app:
