Automate trigger for requestor with specific email address domain

Is there a way to setup an automated rule where incoming requestor that is part of a specific email address domain to flag with a specific Component value?

I only found the option of email address being a part of a person/group.

Yes, this can be done with automation. You would need to use smart value and the substringAfter separator to get the domain, something like this:
