Hi everyone,
Is there a way when a customer is connected and makes a new request, to take the name of the organization that I've added his email and load it into a text field of form automatically or with some automation?

Here is the Automation for Jira rule which allows setting the organization field based on user email.
I am not sure though why you need it to be populated into a custom field when you could use the Organization field which is available in Jira Service Management Requests
