Attachment field text
I would like to change the text that is visible in an attachment field. Currently it says "Drag and drop files, paste screenshots or browse".
I would like to remove the "paste screenshots" to prevent users from sending images as an attachment.

No you can't remove the word 'paste screenshots', given file attachments could be files, screenshots or whatever...
However what you could do is add a message and colour/color it.
For example in Visible fields you could add some colour/color to your field help using some basic markup code.
In the Customer Portal it looks like this:
