as a customer I want to chat with a employee to ask questions. Is it possible in my own JSM portal or only via Slack & Microsoft Teams?

Do you mean like a live chat type function?
You can chat with an employee who is assigned to your service request by responding to the ticket and they'll respond back on the ticket the same way.
Since you're the customer, that's probably all you can do apart from using external software such as teams or slack.
There are solutions available in terms of apps for JSM that support this but I won't go into detail on that as that is aimed more at admins etc.
