Hi Team,
So when we book out a meeting room, with the email address which is the same email address as the "connected email address" it will generate a new ticket.
Anyway to stop this or is there no way around with the same email address?

As long as the e-mail address is used, JSM will pick it up and parse it. However, you can block certain e-mails from using it. Hope this helps.
