Hi Team,
We are setting up our dashboard where we want to display the issues raised by a customer in a specific time frame. We have several customers (Organizations) in our portal and tickets keep coming on a daily basis.
Our target is to get the customer reported tickets in past 7 days and display a graph which shows the workload for each customer.
Currently we are unable to get the Organization in pie chart in our dashboard.
Kindly help us with this request.

How many organizations do you have?
If you don't have too many, you can write a query to pull tickets raised by a specific organization and then report on those queries.
Example:
reporter in organizationMembers("TEST Org") AND project = SD AND resolution is EMPTY AND "Request Type" is not EMPTY

we have around 100 Organizations and the number will increase in future. So if you can provide us any alternative.
