You can only have one Help Center for the whole of the JIRA instance that hosts Service Desk. There is currently an open Feature Request to implement more branding and customization of this:
You can have multiple Service Desk projects, but if they are on the same JIRA instance, they will have the same Help Center. The only way around this is to have multiple JIRA servers with Service Desk.
What do you mean a "different view"? Do you want to have different options, request types for different customers or just different logo, welcome message... ? In plugin Service Pack for JIRA Service Desk there is option like "Hide request type for a group". So if you have your customers in different groups you can set a different request types for customers.
