I would like to be able to change a custom field from my list view just like I can for my Status. Is that possible or is it only available for baked in fields?

Taking a look at your screenshot, I believe you are looking for a way to inline edit the custom fields in your Service desk queues, where you can only edit Assignee and Status today. Is that correct?
If I properly understood your request, I'm afraid Jira Cloud SD does not allow other fields to be edited directly from the queue. We understand how this feature would be useful to optimize your time when editing issues, so we created the following feature request to ensure our PMs will consider the implementation of this feature in the next releases:
