How do you edit the Operational or Product categorization fields?

JSD, Incident Request type has drop down lists for Operational and Product Categorizations.  How/where can you edit the contents of the drop down?

Most likely in the Custom Field configuration (see the documentation) in JIRA. You need administrator permissions for that, so if you are not the administrator yourself, (s)he's the one to talk to.
