If you expect Jira's notifications to display the field, you might want to edit the velocity templates associated with the email events, That will apply to the whole instance and it's not recommended as it has to be maintained (during upgrades for instance).
If you use the Service Desk Custom emails, you can add customfield values or field values easily.
