How I can configure issue to t get accept from only one person? I have this situation in company is 5 users: userA, userB , userC, userD, userE and each user can accept the task but i don't know which user is on-line know. When i chose all 5 users, then all of this users need accept this task.

what exactly do you mean by "accept the issue" - approval functionality in Jira Service Desk?
If so, there is an option "Consider approved after" available, when you configure the Approval.
If you insert number 1, it should do the trick (any of the five users can approve it and after the approval the issue would be approved).
