Atlassian does provide weekly product demos for Jira Service Desk such as https://www.atlassian.com/software/jira/service-desk/demo

However Atlassian does not host Jira Server demo sites to the best of my knowledge.   You could sign up for a trial of Jira Cloud on https://confluence.atlassian.com/cloud/set-up-your-trial-744721599.html and possibly use that Atlassian Cloud hosted site as a means to demo our Cloud products. 

However, please note that the Jira Cloud and Jira Server product lines do not currently have a 1:1 feature parity between themselves (ie, not all features in Jira Cloud can be found in Jira Server and vice versa).   Specifically you will find that Jira Cloud has a new UI that looks very different from what you will see in Jira Server today, but there are other features that are quite different between the products still.
