we changed the ServiceDesk language into german but still have a lot of "Words" which didn't change, could you explain us where to change this? Thank you

I was reviewing the Atlassian translation site and see the translations for those two were included in the 3.4 Service Desk translation pack. You can verify this on the Translations page. You can search for the Product, version and term you want to find.
If you are not on JIRA Service Desk 3.4 please upgrade to version and you will see the correct translation per the Languages available from translations.atlassian.com knowledge base article.
