I don't see how to get added to Jira Product Discovery (JPD) as a "Project Admin". Need to get added as "Project Admin" to be able to edit the fields on JPD.
Currently I am a User(creator) / User Access Admin / Contributor.
Can someone help out please!

This can be managed under each project's Settings >> Access tab where a user's role can be assigned - including the project-admin role:
As you are aware, only project-admins can create, edit and delete fields.
You must be a registered user to add a comment. If you've already registered, sign in. Otherwise, register and sign in.
