Hi, one of our staff members has left the company, what do I need to do to remove him from the system.
I have access to his account and I can closed any open tickets, but how do I change ownership of pages he has created so they are not lost?

You don't, because that would be damaging audit information.
Simply deactivate the user. They won't be usable any more, and you won't destroy your information.
