how or where can we know the default custom fields in Jira? How many are there(default)
and how can we identify whether it is a default custom field or user created field in JIRA 6.4 or 7
None. JIRA doesn't create any custom fields.
Service Desk and Software create some.
It has "system" fields, which is a fixed list, which you can get from https://confluence.atlassian.com/jira/what-is-an-issue-270829373.html - but be warned, some of these are not really "fields" as most people think of them. Issue type, Project, Key, links, watchers etc are structural artefacts, Status is not a field, it's an indicator of a process, and although "resolution" is a field, it's not one you can hide/remove and ignore.
