how to add fields to list view for export

When searching for issues, there should be a button on the right hand side called "Columns". If you click on there, you can select which field you want to add to the view. From there, you can click on "Export" and select the "Excel (Current Fields)"  option. This will export the issues to Excel that were in the list view.
