Why was our Atlassian Cloud instance Changed to JIRA 7??

It's always that way. JIRA Cloud will always have the latest stable version. They mention this on their Cloud blogs (https://confluence.atlassian.com/cloud/how-to-follow-the-atlassian-cloud-documentation-blog-686854099.html) which is also documented here https://confluence.atlassian.com/cloud/application-versions-687219181.html

Because Cloud is always maintained at the latest version of JIRA that Atlassian consider stable.

Rolling and constant upgrades are one of the selling points.
