What should be done with releases after they're released?

This question is in reference to Atlassian Documentation: Configuring releases

Should released releases just be deleted?  Is there any benefit or hazard to this?  Do they get deleted when the configured JIRA version is released/archived/deleted?

You should never delete a release. It should be kept for auditing or whatever.

You can archive a release once the release is not relevant anymore. The existing issues will still be in that release but the release won't appear in the dropdown for new issues once archived.
