We'd like restricting the creation of subtasks to specified groups, only users of a certain group are allowed of creating subtasks. These groups are different from which are allowed of creating tasks.
We can use "Permission Scheme: Create Issues" but this option implies that only these users could create tasks and subtasks. We need to choose different groups for creating tasks and creating subtasks
Any of you know if this is possible?

You could modify the subtask workflow and add a validator to the "create" transition that will prevent anyone that isn't in the validator from creating issues.
The problem with that is the option will still be there but to the user the action will fail and you'll get help calls.

Not out of the box. All issue types are covered by the create issue permission. There may be a plug-in that covers that so search the marketplace.
